Recipe: Cucumber Sandwich

This child-friendly and healthy cucumber sandwich is perfect for a lunch box, after-school snack or power breakfast. The creamy, crunchy no-cook recipe is delicious, easy to make and provides protein without using meat. Pair with cauliflower or sweet potato chips for a filling meal.

Prep time: 10 minutes

Servings: 1 (Ingredients may be multiplied as needed.)

Tip: Make cream cheese mixture ahead. Refrigerate in an airtight container for up to one day.

Ingredients  

  • 2 ounces cream cheese, room temperature
  • 1 tablespoon low-fat plain Greek yogurt
  • 1 tablespoon sliced fresh chives
  • 1 tablespoon chopped fresh dill
  • ¼ teaspoon ground pepper
  • 2 slices whole-wheat sandwich bread
  • ⅓ cup thinly sliced English cucumber

Instructions 

  1. In a small bowl, stir together cream cheese, yogurt, chives, dill and pepper until well-blended.
  2. Spread the mixture evenly on one side of each bread slice.
  3. Top 1 slice with cucumber slices. Then top with the other bread slice, cream cheese-side down.
  4. Cut the crusts from the sandwich. Then cut it in half.
